Gas has more raw power but it's extremely inefficient because most of it just escapes into the room, whereas with induction it all goes into the cookware. Our induction stove boils water way faster than our gas one did, and the gas one on full blast melted and ruined the handle on the pot since so much of the heat escapes around the sides. Technology Connections on YouTube did a video on the topic, with tests comparing the time and energy required to boil water with gas, induction, resistive etc [VIDEO]

Any on expert on induction stoves here? Alec mentioned in a technology connections video that the next generation of induction works with more cookwear/better with suboptimal cookwear, but I couldn't find any sources or information on that. He mentioned it here [0] or in the associated video [0] [VIDEO]

Technology Connections on YouTube actually tested this and found electric to be slightly faster: [VIDEO] It's a one-hour-plus video of someone literally boiling water, so there may be issues with the testing setup that I skipped over.
