I haven't ever done anything too significant in Haskell, but the Jekor Redo [1] videos are fantastic, and demonstrate the slow building up of more complicated things than "reverse this string." I haven't watched his xmonad [2] or pandoc [3] videos yet, but I would bet that they are highly worthwhile as well. - 1: [VIDEO] - 2: [LINK] - 3: [LINK]

Chris Forno (jekor) made an implementation of djb's redo in Haskell. The videos of him live coding it are on YouTube, and I recommended it for anyone wanting to learn Haskell. [VIDEO]

There's definitely a stage when you want to graduate from bottom-up tinkering & learning the underlying concepts to making things -- this is where I feel there's a big gap in the haskell materials right now. There's some great screncasts though which have been helpful.
